- Prepare 175 g dark muscovado sugar
- Make ready 85 g golden syrup
- Get 100 g salted butter

- Prepare 1 tsp ground cinnamon
- Prepare 1 egg

Combine the flour, baking soda, cinnamon, ginger, cloves and allspice; stir into the creamed mixture. Place brown sugar and butter in a bowl. For a whimsical presentation, arrange these cookies in a lunch box lined with colorful packing paper. Refrigerate the dough up to three days, or freeze up to one month.
Instructions to make Mini gingerbread people:
- Put the sugar, syrup and butter in a pan. Melt over a medium heat and bubble for 2 min Minutes. Remove from the heat and set aside to cool.
- Mix the flour, bicarbonate soda, ginger and cinnamon in a bowl. Add the cooled sugar mixture and the egg. Stir into the flour and form a dough. Knead for 2-3 minutes and then wrap in cling film and chill for 30 mins or more.
- Preheat the oven to 180 degrees. Roll out the dough to a 3mm thickness. Then use a cookie cutter to cut out your gingerbread. I decided to use a mini cutter (5cm x 4cm) to get bite size biscuits but you could use any shape or size. This picture below shows the scale.
- Line a large baking tray with baking paper and place your gingerbread people on it. The dough will expand when cooking so be sure to leave a good gap between each one. You’ll have to cook multiple batches.
- If making small people, bake in the oven for 5-6 minutes. For larger people, bake for 8-9 minutes. You want them to bake until golden. Be careful not to burn them - they can turn very quickly. - (see tip)
- Once cooked, remove from the tray from the oven and transfer the gingerbread to a cooling rack. Once cool, decorate and enjoy!

In a large bowl, whisk together flour, ginger, cloves, nutmeg, baking soda, baking powder, and salt; set aside. Using an electric mixer, beat butter and brown sugar until light and fluffy; beat in egg and molasses. Cool it slightly in the pan before tipping it out and letting it cool completely on a wire rack.
