The original recipe called for a couple of cups of muesli, something I don't usually keep in. Instead, I opted to replace the prepared meusli with oats and a mixture of seeds, in lieu of bread flour, I used regular wholewheat. Within minutes my quick seed and oat loaf was born! Add oil, molasses, flax, sunflower seeds, oats, and salt.

The ingredients needed to make Healthy Oat and Seeds Loaf:
- Take 250 ml lukewarm water
- Prepare 1 tsp instant yeast
- Prepare 1/2 tsp salt
- Make ready 250 gram plain/all purpose flour
- Prepare 30 gr organic rolled oat
- Make ready 50 gr pitted dates, chopped
- Take 25 gr pure honey
- Take 15 gr chia seeds
- Make ready 15 gr golden flaxseed
- Get 15 gr black sesame seeds
- Get 15 gr olive oil
Add the oats, bread soda, salt & seeds and mix well until a thick dough is formed. Smooth top with back of spoon dipped in cold water. Scoop into a loaf pan and push down on the dough evenly. Leave aside for one or two hours for the psyllium, chia, flax seeds and oats do their magic.
Steps to make Healthy Oat and Seeds Loaf:
- Grease 1 loaf tin, and set aside. I used baking paper for easy clean up π
- Mix all ingredients in a big bowl, knead with spatula for 4-5 minutes. Dough will be sticky and heavy, this is normal
- Pour dough to the greased tin, sprinkle extra oat/seeds/dried cranberries on top. Set aside and let it proof for 30 minutes (until double in size)
- Preheat oven to 200C/392F
- Bake for 45 minutes, or until it sounds hollow when tapped in the middle
- Leave in the loaf tin for 5 minutes before move it to cool completely in wire rack
- Best serve warm, with cream cheese spread/assorted jam. If you keep it for the next day, spray some water on the bread and bake at 150C/302F for 10 minutes. It will be crispy and soft again.
Scoop into a loaf pan and push down on the dough evenly. Leave aside for one or two hours for the psyllium, chia, flax seeds and oats do their magic. Then drain oats in a fine sieve and put back in the bowl. In a large bow, this will be your main mixing bowl, add the oat flour, sunflower seeds, pumpkin seeds, hazelnuts, quinoa (uncooked) and chia seeds.
