The ingredients needed to make Amla ka Achar:
  1. Make ready 250 gm amla(gooseberry)
  2. Get 3/4 Cup Vinegar
  3. Prepare 1 tsp Methi Dana ( fenugreek seeds)
  4. Get 2 tbsp Saunf/fennel seeds (coarsely crushed)
  5. Make ready 2 inch ginger
  6. Take 3-4 green chillies
  7. Make ready 2 tbsp Gur/jaggery
  8. Get 2 tsp Onion seeds
  9. Take to taste Salt and chilli powder
  10. Get 4 tbsp oil
  11. Get As needed Water to boil amlas

Hot & Sweet Indian Gooseberry Pickle, select green, unblemished amla (gooseberry) for this pickle. Wash the Amla, pat dry and prick all over with fork. Amla achar, it is tangy and spicy achar which can be served as an accompaniment for parathas, theplas or for rice preparation. It can be store for a year or more.

Steps to make Amla ka Achar:
  1. Boil the amlas in watwr for abt five minutes or till soft. Drain the water and let them cool. When cool, they will automatically open up cut them and separate the seeds
  2. In a pan heat some oil.Add methi seeds to it and also add coarsely crushed saunf. Mix them well. Let it cook for sometime
  3. In the meantime in a grinder take some green chillis, few amlas (2-3) and ginger add little water and grind it to a smooth paste
  4. Add this paste to the saunf and methi mixture mix well and cook for some time. And chilli powder and mix well.
  5. Now add the amlas and mix well. Add salt and gur and again mix well and now add 1/2 cup vinegar and keep the rest of the vinegar for later use. Cook well for about 3-4 minutes.
  6. Now add the onion seeds mix well. And now add rest of the vinegar again mix well. Switch off the gas and let it cool. When cool store in an air tight container preferably in a glass container and in the fridge.

Amla achar, it is tangy and spicy achar which can be served as an accompaniment for parathas, theplas or for rice preparation. It can be store for a year or more.
