- Prepare 1 kg Mustard (sarson) leaves, cleaned, washed, chopped
- Prepare 500 gm Spinach (palak), chopped
- Take 1 Turnip (shalgam), chopped
- Prepare 200 gm Dill (soy saag), chopped
- Take 4-5 Radish (mooli) leaves, chopped
- Get 1 tbsp Maize flour (makkai ka atta)
- Get Salt to taste
- Take 3 tbsp Ghee
- Take 1 pinch Asafoetida (hing)
- Get 100 gm Ginger (adrak), julienned
- Get 100 gm Garlic cloves (lasan),
- Make ready 3-4 Green chillies, slit

Saron ka saag is a winter delicacy made in North India with fresh mustard greens and other green leafy vegetables. Sarson = mustard greens, so it's the key component of this saag. Since mustard greens are slightly bitter on their own, this saag is usually cooked with other greens to balance the bitterness.
Steps to make Sarso ka saag:
- Boil 1 cup water in a pan, add the mustard leaves, spinach, turnip, dill, and radish leaves. - Cook for 30 minutes till the water evaporates. - Remove and keep aside to cool. Dry roast the maize flour for a few minutes till a good fragrance emanates. Blend the leaves in a blender.
- Transfer the contents in a pan, add the maize flour and salt, cook till it begins to leave the sides of the pan. Heat the ghee in another pan, add the asafoetida, ginger, garlic, and green chillies. Saute for a while. Add this to the green mixture, mix well.
- Serve with 1 tsp of fresh white butter accompanied with makkai ki roti.
